Which knife set is better?
I am getting a set of Henckels knives for a gift, I love to cook and love my knives to be their sharpest. I want to make sure I'm going to be getting, possibly, the last knives I need. I cannot find much difference from the Four Star 2, the Cuisine and the Pro S. I was wondering if its just the handles that are basically the only difference or if there is indeed a difference in the steel. Thank you.
Pre-outsourcing to China, the blades were all drop-forged, and
out very high quality. I'm not sure these days how you'd go about
ensuring that your blades are not coming out of one of the Chinese
shops, but I do know that blade quality took a dive when it happened.
If you're going to go with Henckels, I'd recommend test driving the
various lines at a store. You won't be able to work with them, but
at least check the heft, balance, grip, etc., so you'll know. My only
pre-Chinese Henckels blade is a Pro-S 10" Chef's knife, and it rocks.
If you do get Chinese blades, take them to the steel a little more
frequently that you would tend to with other knifes, and be sure to
invest in some blade guards. Whatever you do, avoid storing them
blade down in one of those "slide-in" knife caddies.
